Figured I was slacking on no meat Monday and decided to splurge on vegetarian Indian food. Super tasty.

I also cooked 5 eggs for dinner, had some chips, 2 protein shakes, and 3 bananas. But today was a “I need to go to the market” kind of day and decided to make do with what I had at home. Gym also opened back up today, which I couldn’t be more thankful for.

After working out at home for the first time in 3 months because my gym closed (Thanks COVID!) I jumped right into work and before I knew it, it was 1 pm, so I decided to go for pizza. One with chilies, the other with blue cheese and ricotta. Had cereal for dinner along with a protein shake and some fruit throughout the day.

Yes, I know, cereal and eggs over rice, definitely a lazy No Meat Monday.
I had to run around the city this morning to find a place to take a 2x2 passport picture, then spent 20 minutes trying to find somewhere with a black pen (ended up buying one at 7/11) and then found a Thailand Post to ship off my passport to get a renewal. It’s a bit scary sending it off, knowing that my visa expires in a month, and assuming I get it back within the “2 week turnaround” as per the US Embassy website, I have a lot of work to do. I’ll need to visit immigration to transfer Thai entry stamps + extensions into new passport, wait a week, then go back to apply for another 2-month extension, wait 2 weeks for approval, and then go back to pick it up.
I’m glad I only have to go through renewing my passport once every 10 years…

Mexican food is super easy to do vegetarian, and thankfully this place in Chiangmai has good Mexican food - not something I can say about several countries I’ve been to.
